Dig a bucket of littlenecks and dinner's basically made. Our desert-island clam dish is linguine with littlenecks.
You'll need: littleneck clams, linguine, plenty of garlic, white wine, olive oil, butter, a pinch of red pepper flakes, parsley, lemon.
Get the pasta going. In a wide pan, warm sliced garlic and pepper flakes in olive oil until just golden. Pour in a good splash of white wine, add the clams, cover, and let them steam open — five to seven minutes. Toss the cooked linguine right into the pan with the clams and their briny broth, a knob of butter, chopped parsley, and a squeeze of lemon. Serve with bread for the bottom of the bowl.
