When the striper's fresh off the boat, this is the only way we want it: grilled, skin on.
You'll need: striped bass fillets (skin on), olive oil, salt and pepper, a lemon.
Pat the fillets dry and rub the skin with oil, dry skin is crispy skin. Season both sides. Lay them skin-side down on a hot, clean grill and leave them be; in four or five minutes the skin crisps and releases on its own. Flip, give it another two minutes, and pull it while it's still juicy. Finish with a hard squeeze of lemon. That's it. A great striper doesn't need to be dressed up.

Does it shrink? It's 100% cotton, so expect a touch of natural shrinkage on the first wash, nothing dramatic.
How does it fit? Relaxed, with a generous chest and a classic mid-length body. If you prefer a trimmer fit or you're between sizes, size down; for an easy, roomy drape, stick with your usual.
