From first-time shucking accidents to seasoned shuckers’ repetitive strains, there was room for improvement. This is our take on the oyster knife, designed for those who expect more from their tools.

We’ve worked on oyster grants and behind raw bars. In places where the tool you use matters. And we kept seeing the same things: Generic ergonomics. Force over control. Unnecessary cuts. We believed shucking could feel calmer. More controlled. More intentional. So we designed a knife to match the work: Safe, clean, and compact shucking.

Construction
The blade is CNC-machined from stainless steel, ensuring precise edges and consistent quality. Each blade is then overmold-injected with a food-grade polypropylene handle, fusing both materials into a single, resilient tool built to last.
Polypropylene was selected for its strength, safety, and comfortable in-hand feel, while a Mold-Tech texture finish delivers a secure, non-slip grip, even in wet conditions.

The OCK Oyster Knife works across all oyster varieties, from Eastern Atlantic and hefty Gulf Coast to Pacific, Kumamoto, and Olympia, fitting shells ranging from 1.5" to 4.5" in length. The tapered hinge blade is designed to fit snugly into both small and large hinges, giving you a secure fit before you ever apply pressure.

How sharp is the knife blade?
Sharp enough to do the job, not sharp enough to make it dangerous. The stainless steel blade has a moderate edge: firm enough to scrape the adductor muscle cleanly from the shell, but intentionally not a cutting blade. That's by design. In developing the OCK knife, we reframed what an oyster knife actually does: it's a prying tool and a scraping tool, not a cutting tool. A clean scrape preserves the oyster meat; a cut damages it.
